Tijuana Bacon-Wrapped Dog (aka Danger Dog/TJ Dog)

Bacon-wrapped hot dog, typically grilled until crispy, served in a bolillo roll (Mexico) or standard bun (US). Topped with grilled onions, peppers, jalapeños, pico de gallo, beans, mayo, mustard, ketchup; sometimes pineapple, avocado, crema.

The Tijuana Bacon-Wrapped Dog—also known as a TJ Dog or Danger Dog—is a street food icon born in the border city of Tijuana and made famous on both sides of the U.S.–Mexico border. It starts with a hot dog wrapped in bacon and griddled until crisp, then loaded into a soft bun and topped with grilled onions, jalapeños, mayonnaise, ketchup, mustard, and sometimes diced tomatoes or salsa. Often sold from makeshift carts late at night, especially outside clubs or at busy intersections, it’s the ultimate post-party snack. The term “Danger Dog” came from U.S. vendors adopting the style and playing up its outlaw, unregulated roots. Despite occasional crackdowns, the TJ Dog endures—bold, greasy, and deeply beloved. It’s the hot dog with street cred.
Authentic Recipe
Ingredients
- 4 Jumbo beef hot dogs (All-beef preferred)
- 4 slices Bacon (Regular-cut bacon, 1 slice per hot dog)
- 4 Hot dog buns (Standard buns or bolillo rolls)
- 2 Bell peppers (Red and/or green, sliced thin)
- 1 large Yellow onions (Sliced thin)
- 2 Jalapeños (Fresh, sliced)
- as needed Mayonnaise
- as needed Yellow mustard
- as needed Ketchup
- 1/2 cup Pico de gallo (Optional, diced onion, tomato, cilantro)
Instructions
- Wrap each hot dog tightly in bacon, spiral-style from top to bottom. Secure with toothpicks if needed (remove before serving).
- Slice onions, bell peppers, and jalapeños into thin strips.
- Heat large skillet or griddle over medium heat.
- Add bacon-wrapped hot dogs first - they need more cooking time. Cook 7 minutes per side until bacon is crispy and golden.
- Around minute 5, add sliced vegetables to the same pan. Cook until caramelized and soft, about 10-15 minutes total. The bacon grease will flavor the vegetables.
- Remove toothpicks from hot dogs if used.
- Place hot dog in bun and top generously with grilled onions, peppers, and a grilled jalapeño.
- Drizzle with all three condiments: mayo, mustard, and ketchup.
- Optional: Add pico de gallo or other fresh toppings.
- Serve on parchment paper, street vendor style.
