Authentic Sonoran Dog hot dog
History

The Sonoran dog emerged in northern Mexico (Sonora) in the 1980s and spread to Arizona border towns—especially Tucson—via carritos (street carts). A bacon‑wrapped frank is grilled and nestled in a split, slightly sweet bolillo‑style bun, then buried in slow‑cooked pinto beans. Typical toppings include chopped tomato and onion, pickled jalapeños, mustard, mayonnaise, and a drizzle of salsa verde or crema. Local stands fine‑tune their beans and salsas, but the bacon‑wrapped frank + beans + bolillo core defines the style.

Authentic Recipe

Ingredients

  • 8 Large hot dogs (All-beef, preferably 6 to 1 (6 hot dogs to a pound))
  • 8 Thin bacon slices (Oscar Mayer or similar, not thick-cut)
  • 8 Bolillo rolls (Fresh, sliced into pockets. Substitute with large soft hot dog buns if unavailable)
  • 1 cup Pinto beans (Whole, warmed (NOT refried beans))
  • 2 firm, ripe Roma tomatoes (Diced)
  • 1 small Red onion (Diced)
  • 2 Avocados (Diced)
  • 1 cup Pickled jalapeños (Drained)
  • 4 tablespoons Salted butter (Room temperature)
  • 1/4 cup Mayonnaise (For zesty mayo)
  • 1/2 cup Fresh cilantro (Finely chopped, plus extra for garnish)
  • 1 tablespoon Hot sauce (For zesty mayo)
  • 1 Lime (Zested and juiced)
  • as needed Yellow mustard (For serving)

Instructions

  1. Wrap each hot dog evenly with 1 slice of bacon. Secure with toothpicks at both ends and refrigerate for at least 30 minutes to help bacon adhere.
  2. Make zesty mayo: Combine cilantro, mayonnaise, hot sauce, lime zest and juice, salt and pepper in a bowl. Whisk until well blended. Set aside.
  3. Heat grill or grill pan to medium heat. Grill bacon-wrapped hot dogs, turning frequently, until bacon is extra crispy but not burnt, about 10-12 minutes total.
  4. Warm the pinto beans in a small saucepan over low heat. Season with salt and pepper.
  5. Butter the outsides of the bolillo rolls and gently griddle until just golden brown (do not toast hard).
  6. To assemble: Layer warm pinto beans on the bottom of each roll, followed by a bacon-wrapped hot dog.
  7. Top with diced avocados, tomatoes, red onions, and pickled jalapeños.
  8. Drizzle with zesty mayo and add a squirt of yellow mustard if desired.
  9. Garnish with cilantro leaves and serve with hot sauce on the side.
