Perro Caliente Colombiano

Hot dog dressed with pineapple sauce, garlic mayo, salsa rosada, crushed potato chips, and a quail egg; optional cheese, BBQ, or avocado sauce.

The Perro Caliente Colombiano is a wildly over-the-top hot dog that’s as much a street party as it is a meal. Found all over Colombia—from Bogotá to Medellín—it starts with a standard boiled or grilled sausage in a bun, then gets piled high with toppings like crushed potato chips, shredded cheese, coleslaw, pineapple sauce, ketchup, mustard, mayonnaise, and sometimes quail eggs or bacon bits. This maximalist dog reflects Colombia’s vibrant street food culture and love of bold, sweet-savory combinations. It’s especially popular late at night, after a night of dancing or drinking. There’s no single “correct” version—each vendor adds their own twist. It’s messy, indulgent, and 100% Colombian.
