Authentic Detroit Coney hot dog
History

The Detroit Coney Dog emerged in the early 20th century, inspired by Greek and Macedonian immigrants who adapted American hot dogs with flavors from their homeland. Its signature chili is a loose, saucy ground beef mixture, heavily seasoned but not sweet, and often cooked with beef heart or suet for richness. Served on a natural-casing frank with a snappy bite, it's finished with bright yellow mustard and raw chopped onions in a soft, steamed bun. Detroit's two most famous Coney institutions—Lafayette and American—have long-standing rivalries, each claiming to be the original. The Detroit variant leans toward savoriness and depth, with a chili that's moist but not runny. It's a staple of city diners and Coney Island-style restaurants across southeast Michigan. This style has become synonymous with urban Michigan's comfort food culture.

Authentic Recipe

Ingredients

  • 4 Natural-casing beef hot dogs (Koegel, Dearborn, or Kowalski preferred)
  • 4 Hot dog buns (White buns, steamed)
  • 1 lb Ground beef (80/20 or ground chuck)
  • 1/2 lb Beef heart (optional) (Ground - ask butcher, adds authenticity)
  • 1 Medium onion (Finely diced)
  • 2 Garlic cloves (Minced)
  • 3 tablespoons Tomato paste
  • 2 tablespoons Chili powder
  • 1 tablespoon Paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Cayenne pepper (To taste)
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 1/2 cups Water
  • 2 tablespoons Worcestershire sauce
  • as needed Yellow mustard (For serving)
  • 1/2 medium White onion (Finely diced for topping)

Instructions

  1. In a large pot, brown the ground beef (and beef heart if using) over medium heat, constantly stirring and mashing with a potato masher to break into very fine crumbles.
  2. Drain excess fat but reserve 3 tablespoons. Return reserved fat to pot.
  3. Add diced onions and cook until softened, about 3-4 minutes.
  4. Stir in tomato paste and cook until it deepens in color and caramelizes slightly, about 2 minutes.
  5. Add all spices (chili powder, paprika, cumin, oregano, cayenne, salt, and pepper) and mix well.
  6. Gradually add water and Worcestershire sauce, stirring to combine.
  7. Partially cover and simmer for 45 minutes to 1 hour, stirring occasionally. The meat should break down completely and sauce should thicken to cling to a spoon.
  8. Meanwhile, grill the hot dogs until heated through with light char marks.
  9. Steam the buns until warm and soft.
  10. Place hot dogs in buns, top with yellow mustard, then generously ladle the coney sauce over each dog.
  11. Finish with finely diced raw white onions. Serve immediately.
  12. This is the authentic Motor City style - thick, meaty sauce with no beans!
