Roll and Square Sausage

Classic Scottish breakfast: grilled square sausage (Lorne sausage) in a soft roll, often with fried egg or potato scone.

This Scottish favorite isn’t a hot dog in the American sense, but it definitely plays a similar cultural role. It features “Lorne sausage,” a seasoned, square-shaped pork sausage unique to Scotland, fried and served inside a soft morning roll. Often eaten for breakfast, it may be dressed with ketchup, brown sauce, or even a fried egg. While not served in a traditional bun, the roll-and-square-sausage combo is one of the most iconic handheld meat-and-bread formats in Scottish cuisine. Hearty, salty, and unfussy, it’s a breakfast-time cousin of the hot dog—just squared and proud of it.
