Norfolk Dog

Grilled hot dog topped with chili, onions, and mustard, a signature style from Norfolk, Virginia.

The Norfolk Dog is a proud southeastern Virginia specialty that traces its roots back to George Bacalis, a Greek immigrant who began selling a chiliâtopped hot dog near Norfolkâs City Hall in the early 1930s. Known locally as âHot Dog King,â Bacalisâs version sparked a regional obsession. A classic Norfolk Dog features a natural-casing pork-and-beef frank steamed to snap perfection, then dressed with a finely ground meat sauce (similar to chili), fresh-cut onions, and Lynnhaven-brand mustardâa local heritage brand. Traditionally itâs served on a steamed âMary Janeâ bun custom-fit to hold toppings and maintain structure. For nearly 90 years, old-school shops like Tonyâs, Lewâs, and Jimmyâs have faithfully carried on the tradition, even as Hormel (the original dog supplier) discontinued their branded frank, forcing local producers to reverse-engineer a lookalike. The Norfolk Dog remains beloved for its singular identity: regionally sourced ingredients, simple yet bold toppings, and unwavering local loyaltyâa hot dog legend rooted in Coastal Virginia.
