History

The Chilli Krab Dog is a modern culinary creation rooted in Singapore's adventurous food scene. It blends the format of an American hot dog with the rich, tomato-chili flavor of Singapore's beloved chilli crab, often using a sweet and spicy sauce made with garlic, egg, and fresh chili. Though not commonly found at traditional hawker stalls, it has surfaced in gourmet food halls, concert pop-ups, and chef-led menus eager to play with national identity and global street food. Some versions go beyond the sauce, incorporating actual crab meat, fried mantou buns, or local garnishes like fried shallots and scallions. This hot dog style remains unofficial and fluid, but its emergence speaks to Singapore's reputation as a hub of multicultural, high-concept street cuisine. More a flavor-forward experiment than a standardized recipe, the Chilli Krab Dog is a hot dog with unmistakably Southeast Asian flair.

Authentic Recipe

Ingredients

  • 1 Hot dog or bratwurst (Quality sausage, grilled or pan-fried)
  • 1 Soft hot dog bun (Lightly toasted)
  • 3 tbsp Tomato sauce (Base for chili crab sauce)
  • 3 cloves Garlic (Minced fine)
  • 1-2 tsp Chili garlic sauce or sambal oelek (Adjust to taste preference)
  • 1 large Egg (Beaten, for silky egg ribbons)
  • 2 tsp Brown sugar (For authentic sweet-tangy balance)
  • 1 tsp Rice vinegar (For acidity)
  • 1/2 tsp Sesame oil (For aromatic finish)
  • 2-3 tbsp Fresh crab meat (Optional but recommended, picked clean)
  • 2 stalks Scallions (Finely chopped, green parts only)
  • 1 tbsp Fried shallots (Store-bought crispy shallots)
  • 1/2 tsp Corn starch (Mixed with 1 tbsp water for thickening)

Instructions

  1. Heat 1 tablespoon oil in a wok or large pan over medium heat. Sauté minced garlic until fragrant, about 30 seconds.
  2. Add tomato sauce, chili garlic sauce, brown sugar, and rice vinegar. Stir and let simmer for 2-3 minutes until slightly thickened.
  3. Add cornstarch slurry and stir until sauce thickens to coating consistency.
  4. Slowly drizzle beaten egg into the sauce while stirring constantly to create silky egg ribbons throughout.
  5. If using crab meat, gently fold it in and heat through for 1 minute. Finish with sesame oil and season with salt to taste.
  6. Meanwhile, grill or pan-fry the hot dog until heated through and lightly charred on all sides.
  7. Lightly toast the bun halves until golden.
  8. Place the hot dog in the bun and generously spoon the warm chili crab sauce over the top.
  9. Garnish with chopped scallions and crispy fried shallots.
  10. Serve immediately while hot. Provide napkins - this is deliciously messy!
