Grilled bratwurst sausage in a white bread bun topped with raw onions, curry powder, mustard, and optionally ketchup; a spicy Austrian fast food dish.

A Salzburg street classic credited to Zanko Todoroff, who began serving it at the Balkan Grill in 1949. Two slim bratwursts go into a toasted white roll, finished with curry powder, onions, and parsleyâsometimes a stripe of mustard. Its BalkanâmeetsâAustrian flavors and quick service made it a fixture near beer halls and markets across western Austria.
