Authentic Klobasnek hot dog
History

The Klobasnek (pronounced kloh-BAH-snek) is a Texas-Czech pastry that’s often mistaken for a breakfast kolache—but instead of sweet filling, it’s packed with savory meat, usually sausage, cheese, or jalapeño. Though not a hot dog in the traditional sense, sausage-filled Klobasniky (plural) have become a staple at Texas bakeries, gas stations, and roadside breakfast spots. The dough is soft, slightly sweet, and encloses the sausage entirely, making it more of a bun-wrapped sausage roll than an open-faced dog. Czech immigrants brought the concept to Texas in the 19th century, and the savory version gained popularity in the mid-20th century. It’s a Texas morning tradition now, especially in Central Texas towns like West and Schulenburg. Some versions use hot dogs instead of traditional sausage, blurring the line between pastry and dog.
